The science

What oxidisation actually does

Coffee's flavour comes from hundreds of volatile aromatic compounds. Oxygen attacks these the moment they're exposed to air — the smaller the particle, the larger the surface area, the faster the attack.

Grinding multiplies surface area by up to 10,000×. This is why pre-ground coffee tastes flat.
Most damage happens in the first 3 days after grinding — before the bag even reaches a shelf.
Vacuum sealing removes 98–99% of oxygen. Opaque bags also block light — the second culprit.
